7. We shall honour our local suppliers and producers so that we may promote the small man over the faceless conglomerate

8. We shall not serve tasteless, pre-packaged garbage that represents a nutritional wasteland

9. Neither shall we covet any hidden purchasing discounts or any other dubious income streams

10. Neither shall we ignore the damage that we are all doing to the world around us – we shall recycle, minimise waste and curb energy consumption
